Ricotta Pasta Bake

1 box Quinoa shells
3/4 c Ricotta (skim)
1/4 c parm cheese
1 egg
splash of milk
fresh ground nutmeg
salt pepper

1 TB olive oil
1 TB garlic minced
1/4 c frozen chopped onion
1/2 c frozen chopped spinach
1 large pkg sliced mushrooms

2 TB whole wheat breadcrumbs

put water on to boil
preheat oven to 350
saute onions and garlic in olive oil
when they start to brown add frozen spinach - cook until liquid evaporates
turn down heat
add mushrooms
cook pasta
combine ricotta, parm, egg, nutmeg and milk in food processor
drain pasta - empty water an return pasta to warm pan
add sauteed veg tables & mix
add cheese mixture & mix
spray 8x8 with pam
add pasta mixture
sprinkle top with whole wheat breadcrumbs
bake at 350 for 25-30 minutes

Healthy Chocolate Chip Cookies

3/4 cup chocolate chips
3/4 cup cocconut
1/2 cup walnuts
1 cup almond flour
1 cup oats
1 cup white whole wheat
2 TB oil
1 TB molasses
2 TB agave
vanilla
cinnamon
2 or 3 egg whites

scoop onto cookie sheet
flatten with a glass
bake at 350

Breakfast Bars
1 cup quick oats ground
1 cup or more quick oats not ground
3 egg whites
1 scoop egg white protien
1 TB oil
2 TB agave
1 TB molasses
ginger
nutmeg
cinnamon
cardamon
1/2 pint blueberries
1/2 cup applesauce

spread on cooike sheet bake at 350 until browned and blueberries are bubbling

Black Bean Turkey Chili

Ingredients

2 tbs olive oil

2 pkgs Ground Turkey (not ground turkey breast)

1 cup onion, coarsely chopped

2 green bell pepper, cut into 1/4" cubes

2 cloves garlic, minced

1 tablespoon chili powder or more to taste

3 teaspoons ground cumin

3 teaspoons ground coriander

1 teaspoon dried oregano

1 teaspoon dried marjoram (optional)

1 teaspoon red pepper flakes

1 teaspoon cinnamon

1 can (16 oz.) tomato sauce –

2 cans (16 oz.) black beans, rinsed and drained






Directions

*to make beans easier to digest – drain beans and soak in a large bowl with several tbs of baking soda for at last one hour – then drain and use*



In a 3-qt. Saucepan brown onion and red pepper in oil. Add turkey, garlic, jalapeƱo pepper, chili powder, cumin, coriander, oregano, marjoram, red pepper flakes and cinnamon. Brown mixture over medium-high heat, stirring occasionally, until turkey is no longer pink.

Stir in tomato sauce and beans and bring to a boil. May need to add some water depending on desired consistency.

Reduce heat and simmer uncovered for 30 minutes. OR

Place in crockpot (add more water if needed to cover turkey and beans) and cook 8 hours on low or 4 hours on High

white chili meatloaf

1 pkg ground turkey
2 cans green chilis
1 can garbonzo beans, rinsed
1 jar roasted red peppers diced
1 egg
1/2 cup oatmeal
salt
cumin

mix 1 can green chilis, turkey, egg, oatmeal, salt and cumin
put meat loaf in center of an oblong pan
mix benas and remaining peppers and pour around meatloaf
bake 1 hour at 350

shepard's pie

1 pkg ground turkey
1/2 pkg mixed veggies
4 stalks celery
1/2 c frozen onion
cooked butternut squash
soy or other seasoning sauce
bavarian seasoning - penzy's

brown meat

brown celery and onion
add meat and veggies back to pan and deglaze

put mixture in a casserole dish
pipe butternut squash on to
bake 450 20 - may broil to finish

bacon tomato chicken pasta

2 chicken breasts
1/2 cup frozen onions
3 big pieces good trukey bacon
pint grape tomatoes
whole wheat rotini - cooked
chedder cheese

1) cook bacon in big pan over med low heat
2) salt and pepper chicken - cut into strips
3) cut grape tomatoes in half, salt
4) remove cooed bacon from pan, add onions
5) once onions start to brown, add tomatoes
6) cook chicken in another pan
7) when onions and tomatoes are well doen and chicken is done deglaze pan with onions and tomatoes and add chicken add pasta
add chesse before serving
